Horenso Shira ae

Ingredients

  • 1 lb spinach
  • 1/4 block tofu
  • 2 tablespoons miso
  • 2 teaspoons goma (sesame seeds)
  • 2 tablespoons sugar
  • pinch of salt

Instructions

  1. In a large pot bring a large amount of water to a boil and a pinch of salt. Add spinach stems end first. Over high heat bring water back to a boil. Do not cover.
  2. As soon as the water begins to boil again, quickly put pot under cold running water and allow spinach to cool.
  3. Strain as much water from spinach as possible. You can squeeze out the water by hand. Cut spinach in 2-inch lengths.
  4. Squeeze and massage the moisture out of the tofu by wrapping it in a woven dish cloth. The tofu should not go through the cloth. When the fluid is milky white you can stop.
  5. Grind goma until very fine.
  6. Mix miso and sugar.
  7. Add the mixture with the tofu and goma.
  8. Add spinach and mix well.
