Udon
Dashi
- 4 cups water
- Handfull dashi flakes
- Piece of konbu
Add Kaeshi to Dashi
- 1 cup soy
- 3 tablespoons mirin
- 3 tablespoons sugar
Directions
- Soak konbu in water ~20 minutes
- Bring water to boil, switch off heat and add dashi
- Let soak for~5 minutes
- Strain
- add other ingredients
Mix 1 part kaeshi to 5 parts dashi stock. Vary to your tastes (don't make it too weak or too strong, but remember that you'll be putting soba noodles in it, so make it just a bit stronger/saltier than you think is necessary).
