Cheese Fondue

Ingredients

  • 1 garlic clove, halved crosswise
  • 1 tbsp corn starch
  • 2/3 lb. (300 g) Emmental cheese, grated
  • 2/3 lb. (300 g) Gruyere cheese, grated
  • 1 1/2 cups dry white wine
  • 2 tsp Kirsch
  • pepper
  • nutmeg
  • 1 loaf of bread cut into 1" cubes

Instructions

  1. Rub the inside of the fondue pot with the cut sides of the garlic to flavor the pot
  2. Discard the garlic or keep it for more flavor
  3. Pour the wine into a pot and bring to a mild simmer over medium heat
  4. Toss together the grated cheese with the cornstarch
  5. Gradually add the cheese cornstarch mixture 1 handful at a time to the heated wine in the pot and cook, stirring in a zig-zag pattern
  6. Bring fondue to a simmer and cook, stirring, 5-8 minutes until thickened
  7. Stir in the kirsch, nutmeg and pepper
