Cheese Fondue
Ingredients
- 1 garlic clove, halved crosswise
- 1 tbsp corn starch
- 2/3 lb. (300 g) Emmental cheese, grated
- 2/3 lb. (300 g) Gruyere cheese, grated
- 1 1/2 cups dry white wine
- 2 tsp Kirsch
- pepper
- nutmeg
- 1 loaf of bread cut into 1" cubes
Instructions
- Rub the inside of the fondue pot with the cut sides of the garlic to flavor the pot
- Discard the garlic or keep it for more flavor
- Pour the wine into a pot and bring to a mild simmer over medium heat
- Toss together the grated cheese with the cornstarch
- Gradually add the cheese cornstarch mixture 1 handful at a time to the heated wine in the pot and cook, stirring in a zig-zag pattern
- Bring fondue to a simmer and cook, stirring, 5-8 minutes until thickened
- Stir in the kirsch, nutmeg and pepper
