Parmesan Garlic Mashed Cauliflower

INGREDIENTS

  • 1 medium head cauliflower, cut in florets
  • 2 cloves garlic, not minced
  • 1/4 cup milk
  • 1/4 cup plain Greek yogurt
  • 1/2 cup Parmesan cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Steam the cauliflower and garlic for 10-12 minutes until fork tender.
  3. Put the steamed cauliflower, garlic, milk, Greek yogurt, half the Parmesan, salt and pepper in a blender or food processor and blend until smooth.
  4. Put the mixture in an oven friendly casserole dish and top with the remainder of the cheese.
  5. Bake at 350 for 25-30 minutes or until the top browns.
