Margarita di Dayo Chili
Ingredients
- 3/4 pound ground beef
- 1 cup chopped onion
- 1/2 cup chopped red bell pepper
- 2 cloves garlic, minced
- 1 (16 ounce) can diced tomatoes with liquid
- 1 (16 ounce) can dark red kidney beans, drained
- 1 (16 ounce) can black beans, drained
- 2 (8 ounce) cans tomato sauce
- 2-3 teaspoons chili powder
- 1/2 teaspoon dried basil, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups hot cooked rice
Chopped fresh tomatoes, sour cream, shredded cheddar cheese, and chopped green onion for garnish
Directions
- In a soup pot, cook beef, onion, bell pepper, and garlic until meat is brown.
- Drain and return to pot.
- Add undrained tomatoes, kidney and black beans, tomato sauce, chili powder, basil, salt, and black pepper.
- Bring to a boil. Reduce heat and simmer 30 minutes, or longer if desired.
- Serve over rice. Top with garnishes.
