Margarita di Dayo Chili

Ingredients

  • 3/4 pound ground beef
  • 1 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 (16 ounce) can diced tomatoes with liquid
  • 1 (16 ounce) can dark red kidney beans, drained
  • 1 (16 ounce) can black beans, drained
  • 2 (8 ounce) cans tomato sauce
  • 2-3 teaspoons chili powder
  • 1/2 teaspoon dried basil, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups hot cooked rice

Chopped fresh tomatoes, sour cream, shredded cheddar cheese, and chopped green onion for garnish

Directions

  1. In a soup pot, cook beef, onion, bell pepper, and garlic until meat is brown.
  2. Drain and return to pot.
  3. Add undrained tomatoes, kidney and black beans, tomato sauce, chili powder, basil, salt, and black pepper.
  4. Bring to a boil. Reduce heat and simmer 30 minutes, or longer if desired.
  5. Serve over rice. Top with garnishes.
